    • The baker's yeast catalyzed asymmetric reduction of methyl acetoacetate using different glycerol/water mixtures was studied in more detail by Wolfson's group, which also evaluated the effect of glycerol on yeast viability and enzymatic activity. Increasing the glycerol content up to 50 wt% in water did not affect negatively the effectiveness of the process and allowed an easier and more efficient product extraction:
