The results in this paper showed that at a water/starch ratio of 1.5:1, some residual crystallinity and lamellar structure still remains at the end of so-called gelatinization endotherm. This finding is consistent with our results that at water/starch ratios of 1.5:1 and more, swelling of granules are very incomplete and endotherm G still broadened with increasing water content)
