The authors show that proline substitutions can affect stability against denaturation, which may or may not be also seen in stability to thermoinactivation. Interestingly, one specific substitution, Ser460→Pro showed increased thermoinactivation, presumably due to removal of an O-glycosylation site, showing the importance of post-translational modification in functionality of glucoamylase.
