The first controlled dietary study showing that peripheral insulin sensitivity in healthy humans is influenced by the type of fat in the diet under isocaloric conditions. Decreasing saturated and increasing monounsaturated fatty acids in the diet improved insulin sensitivity but had no effect on insulin secretion. The effect on insulin sensitivity was seen only when the total fat intake was not too high.

Seventeen individuals, with or without obesity and diabetes mellitus, were given a diet rich in saturated or polyunsaturated (mainly linoleic acid) fatty acids in a crossover design. Insulin sensitivity improved on the diet rich in polyunsaturated fat. There was also a decrease in the abdominal subcutaneous fat area.
