    • The lack of secondary structure for peptide II in water might suggest that SAA-2, unlike dipeptide Asn-Gly, is not predisposed to nucleate hairpin folding in this solvent. On the other hand, we observed that, under conditions that promote interstrand hydrogen bonding (50% aqueous methanol), the replacement of the Asn-Gly turn for SAA-2 is compatible with a β-hairpin conformation. To investigate these aspects further, other modified peptides will be studied in the near future.
