    • Challenges in the addition of probiotic cultures to foods
    • This review discusses the many challenges that industry faces in adding probiotic cultures to food products. The authors examined several important issues when developing probiotic foods, including strain selection and form, addition level, toxicity, viability during processing and in products, and sensorial effects. They indicated means currently available to achieve these goals and areas where developments are needed or opportunities are present.

    • This study showed that immobilized cell technology combined with long-term continuous culture can be used to efficiently produce, in a one step process, probiotic bacteria with enhanced tolerance to various environmental stresses. The tolerance of free cells produced in the effluent medium to hydrogen peroxide, simulated gastric and intestinal juices, antibiotics and nisin, and freeze-drying markedly increased with culture time. Tolerance was generally higher after 6 days than that of stationary-phase cells produced during free-cell batch fermentations.
