Int J Hyg Environ Health 2001; 203:347-361. This review analyzes the 26 published epidemiological surveys that have evaluated the prevalence of STEC O157:H7 infection of cows. Studies from both Europe and North America were included. It is a nice summary of risk factors during all the events from farm to fork. Areas that need more investigation are highlighted. This paper is a good starting point for those interested in understanding the complexity of industrial scale beef production and its implications for infectious diseases.

This is one of a series of incredibly important studies using the baboon model. Although this model does not address issues at the gut level, it is by far the best model for study of the endothelial and renal injury events. It seems to very closely parallel the human disease.
