    • In solvent-free heterogeneous reactions, it has been observed that a high proportion of monoesters is often correlated with a high saponification rate. This phenomenon would come from the saponification of polysubstituted sucroesters formed in the early stages, when heating is carried on too long. Thus, the ratio for monoesters/polyesters (or diesters) can be misleading for assessing the effectiveness of the reaction if the saponification rate is not taken into account.
