Potatoes are today classified in the genus Solanum, which contains 900 species, 235 of which bear tubers. Seven of these tuber-bearing species have been cultivated for millennia in South America, mostly in the Andes. One of those seven species is Solanum tuberosum, which exists in two cultivated subspecies: S. tuberosum subsp. andigena (adapted to short days), and S. tuberosum subsp. tuberosum (adapted to long days). Today all cultivated potatoes outside South America are varieties of S. tuberosum subsp. tuberosum. The 228 wild species range from Colorado in the North to central Chili and Argentina in the South, with one center of diversity in the highlands of Peru and Bolivia and another in Mexico.
