Actually the momenta of the two electrons do not exactly add up to zero, since having an interface perpendicular to the x direction means that the x-component of the total momentum needs not be conserved. However, this error is of the order of the inverse coherence-length, which is much smaller than the Fermi momentum. Thus up to this error, the hole created can be said to be at momentum -k if the incoming electron has momentum +k.
