Structured fluids as microreactors for flavor formation by the Maillard reaction
-
Vauthey S, Milo C, Frossard P, Garti N, Leser ME, Watzke HJ. Structured fluids as microreactors for flavor formation by the Maillard reaction. J Agric Food Chem 2000;48:4808-16. This paper shows that a cubic liquid crystalline phase is at least as efficient as reaction medium for a Maillard reaction as a microemulsion based on the same surfactant. It is assumed that the effect is due to the larger interfacial area of the cubic phase than of a water-in-oil microemulsion.

Nucleophilic substitution sulfonation in microemulsions and emulsions
-
Husein MM, Weber ME, Vera JH. Nucleophilic substitution sulfonation in microemulsions and emulsions. Langmuir 2000;16:9159-67. This paper describes the use of a microemulsion based on a quaternary ammonium surfactant as medium for synthesis of decyl sulfonate from decyl bromide and sodium sulfite. It is shown that the reaction proceeds via decyl chloride, which is formed by reaction of the bromide with the surfactant counterion, chloride.

Organic cyclizations in microemulsions catalyzed by a cobalt corrin-polyion-scaffold on electrodes
-
Njue CK, Rusling JF. Organic cyclizations in microemulsions catalyzed by a cobalt corrin-polyion-scaffold on electrodes. Electrochem Commun 2002;4:340-3. The paper demonstrates that cyclisation reactions can be performed in microemulsions using metallopolyion films on electrodes as catalysts. The microemulsion is here employed as a way of bringing together the polyion catalyst that does not operate in organic solvent with a nonpolar reactant, insoluble in water.

The kinetics of an interfacial reaction in microemulsions with excess phase
-
Bode G, Lade M, Schomäcker R. The kinetics of an interfacial reaction in microemulsions with excess phase. Chem Eng Technol 2000;23:405-9. An interfacial reaction model describing the kinetics of a nucleophilic substitution reaction in microemulsion is presented. The model assumes that one reactant is only soluble in the water domain and the other reactant is only soluble in the organic domain and the other reactant is only soluble in the organic domain; thus, the reaction occurs exclusively at the interface. The model is shown to be valid for synthesis of 1-phenoxyoctane from 1-bromooctane and sodium phenoxide.

Regioselectivity control in Diels-Alder reactions of surfactant 1,3-dienes with surfactant dienophiles

Jaeger DA, Su D, Zafar A, Piknova B, Hall SB. Regioselectivity control in Diels-Alder reactions of surfactant 1,3-dienes with surfactant dienophiles. J Am Chem Soc 2000;122:2749-57. A pronounced regioselectivity is obtained for a Diels-Alder reaction based on surface-active dienes and dienophiles, performed in a micellar system. The selectivity is explained by an alignment of the two reactants in the mixed micelles with the polar headgroups pointing out into the aqueous domain.
