An excellent paper that reports on a detailed study in which gas chromatography-mass spectrometry was used to analyse catechin, 3'-O-methylcatechin and their sulphate and glucuronide conjugates in plasma after the consumption of red wine. The data obtained suggest that if catechin is a protective nutrient, the active forms are likely to be metabolites, which are far more abundant in plasma than the parent flavon-3-ol.

A thorough investigation of the absorption and metabolism of cyanidin-3-O-glucoside in a model rat test system which establishes that the anthocyanin and related compounds accumulate in body fluid and tissues without undergoing extensive metabolism. After ingestion, an anthocyanin degradation product, procatechuic acid accumulated rapidly in plasma in amounts markedly higher than the levels of cyanidin-3-O-glucoside. However, procatechuic acid was not detected in kidneys while cyanidin-3-O-glucoside and its methyl derivative did accumulate. Methylated cyanidin-3-O-glucoside was the sole constituent to appear in the liver. The accumulation of cyanidin-3-O-glucoside and its methylated derivative in liver and kidneys is of special interest as these compounds may contribute to the antioxidant capacity of the tissues.
