This paper describes a fascinating potential application of polyphenolic proteins. Given the high affinity of polyphenolic proteins for iron (III) and other metals, the authors describe the coating of stainless steel with the polyphenolic protein of M. edulis, and the properties of the film formed that conferred resistance to corrosion in sea water.
